Nice Indian Food
Dear friends around the world,
When I first arrived in India back in 1987, I had never had Indian food in my life. Being in India initially I could not get use to Indian food and did not like it at all. I found it so hard to adjust to the food. But once I got use to it, I was really amazed how good Indian food is especially the vegetarian selection which is vast. Now Indian food is one of my favorite along with Kalmuck, Tibetan, Italian, Japanese and Chinese foods.
Had gathered together some friends to learn to make some more popular Indian dishes. We had a professional cook from India demonstrate to us how to make six favorite dishes such as Vegetable Briyani (mouth watering delicious rice), Naan (fresh Indian bread), Paneer Tikka (cheese), Malai Kofta (vegetable balls in delicious sauce), Paneer fried rice (cheese with rice) Aloo Matar (peas and potatoes) and Dhal Makhani (nutritious lentil). I hope these videos will help to see visually how to prepare some excellent Indian cuisine. These seven dishes are some of my favorites. Indian cuisine has a massive choice for vegetarians as there are tens of millions of vegetarians in India. It is part of their rich culture. I really like the fact there are so many vegetarians and the choice of food is not only varied but delicious for vegetarians.

Indian cuisine has a lot massive and delicious vegetarian choices.It s nice to learn and try out to cook some Indian foods when there is a chance.
Indian food is full of spices, colours and very rich in taste. We are very lucky living in Malaysia where we are spoil with many delicacy due to different cultures, races and history. There are in fact a lot of vegetarian choices for Indian food. Hope to try more in the future.
Having grown up in the multi-cultural Malaysia, I am accustomed to tasty Indian delights, especially south Indian cuisines! Because it is a norm for Indians to observe vegetarian once a week, Indian cuisine reflects this tradition. The selection of vegetarian dishes including the very delicious Saag Paneer and the assortment of vegetables Pakoras are some of the must have. Yumz!
The indian food dishes looks delicious even though i do not really enjoy indian food as much as vegetarian dishes.The thick herbs and curry is too much for me. But once awhile i do take .Its nice to learn and try some indian foods.

Usually, the Indian cooking will use the spices like ginger, turmeric, garlic and etc. All these spices and herbs in Indian foods are actually good for the body that serve for medicinal and healing purposes.

Thank you Rinpoche for sharing these delicious indian food dishes. My family and i loves indian dishes very much.And my mum loves to cook all kinds of dishes. But we find that indian dishes are the most appetizing. I would ask my mum to try out all these dishes when there is a chance. Have yet to try out Mrs Patel’s Pav Bhaji recipe. Can’t wait to try it! 🙂

The vegetarian briyani looks so yummy! Though I don’t take too spicy food, briyani is one of my favourite.

I love Malai Kofta and vegetable briyani. The paneer tikka recipe is an interesting take as I always thought tikka like tandoori is for meat and I have turn vegetarian more than a year ago.
The care that Rinpoche puts in to show us what we can do as vegetarians is touching. A few years ago, it wasn’t that easy to find vegetarian food and most are in restaurants. Back then, these vegetarian foods were pricey. Now it is more accessible in that there are more shops catering to the middle and lower income group so that more can make that choice to be aware and mindful of animal suffering.
When we reduce consumption of meat, we can reduce suffering for animals. When we reduce suffering for others, we reduce negative karma. We can work towards stopping the accumulation of more negative karma so that we can work at purifying the negative karma we have collected. There is hope yet for us then.
For Asian, especially in a Malaysian Chinese family, food is like love from the parents. The parents worry that we are wanting when we are hungry. We cannot concentrate and do what we have to do i.e. to study if we are school-going kids. I remember one of Rinpoche’s video when Rinpoche was in Thailand, with his students offering alms of food to the Thai monks. In the video, Rinpoche taught that offering food is offering sustenance for the body. It is especially meritorious to offer food to monks as when their stomach is not wanting and they can be healthy so they can meditate better, they can benefit the people more.
So, Rinpoche posting about food recipes is, to me, Rinpoche’s way of showing love and care. It is also to show that we can also share food with others when we cook. In that way, the love goes around.
